«Premium for the use of flours with an exclusively vegetal composition with a short supply chain» while, as regards «the use of foods and preparations, intended for human consumption, obtained through partially defatted powders of Acheta domesticus, of the yellow flour larva ( larva of Tenebrio molitor), of the Locusta migratoria and of the larva Alphitobius diaperinus (lesser mealworm)", such use "would increase the management costs of the canteen service, both due to the costs of the raw materials in question and due to the greater number of personalized diets that should be developed, consequently requiring a greater use of personnel to carry out the service itself".

This is what the recent supplementary resolution (to that of last January) of the municipal administration of Palau provides for the assignment of the canteen service for nursery, primary and lower secondary schools, for summer activities for minors and for poor people. This is in addition to the rewards already arranged in January, regarding the presence of products from social agriculture (prisons or people with disabilities), as well as a strategy against food waste that includes constant monitoring of surpluses.

These must be "top quality food products, having all the requirements of authenticity and freshness, favoring fresh and seasonal raw materials, excluding the use of spices and flavor enhancers and excluding pre-cooked foods". The guidelines also provide that school and summer canteens must be a place of intercultural exchange, with monthly food days in which to experiment with cuisines and recipes typical of the ethnic minorities present within the classes.
