The Italian senior pastry champion proclaimed at the International Ice Cream, Pastry, Artisan Bakery and Coffee Exhibition (Sigep) underway in Rimini comes from Sardinia. On the podium Marco Deidda, 39 years old, originally from Oristano and who lives in Decimomannu.

«Great happiness when I heard my name – he says – also because I spent many months training, for many hours a day, and this is a result that fills me with pride».

The competition, which for the first time saw a Sardinian win, «on the island we have a champion in the chocolate sector, the pastry sector was missing», explains Marco, had precise rules. «Only professionals with at least five years of documented experience in the sector could participate. We had to make a chocolate cake, with the obligatory presence of pastry, while for the artistic production the choice focused on chocolate, artistic sugar and pastillage, a particular technique. I presented a sort of sculpture respecting the theme of this edition, that is "Travelling towards the East", given that there is a twinning with the Sigep of Asia".

The proposal submitted to the jury was that of a woman representing Asia, «a choice dictated by the fact that Asia recalls a female name and I liked the idea of playing on this combination. I therefore took elements from China, from Japan, and created a mix, creating a sort of sculpture."

Now Marco Deidda, who has been a pastry chef for 20 years, will represent Italy in the world carrying the flag of Italian pastry making.
