Japan is the absolute winner of Girotonno 2024, the international event that this year too has transformed Carloforte into the "Capital of quality tuna".
The event, now in its 20th edition , was organized by the Municipality of Carloforte in collaboration with the Feedback agency, which has followed the project since its origins, and with the support of the Sardinia Region and the main sponsors Delcomar, Piam Tonnare and Fondazione of Sardinia.
The winner of the competition was chef Yamamoto Eiji, from the Sushisen restaurant in Rome, together with chefs Kunihiro Este and Siriluk Boonputtaruk.
On Saturday evening, after having passed the preliminary stages, the Japanese team competed in the three-way final with the representatives of Palestine , represented by chefs Shady Hasbun and Samia Sowwan, and Brazil , with Jefferson Elias Ribeiro da Silva, known in Italy as Chef Tom. A challenge where the flavours, aromas and colors of the Japanese recipe, called “Sushisen Maguro Kinkan Tonyu Tartare” (i.e. tuna tartare with Kumquat mandarin, organic Chiba tofu cream, Yuba, miso, ikura and caviar) have conquered the palates of the popular jury and the technical one, led by president Roberto Giacobbo, and the top of the Tuna Competition. In the final ranking, the result of the average of the votes of the two juries, Brazil placed second and Palestine in third.
The mayor of Carloforte Stefano Rombi presented the first prize to the winners, a finely crafted ceramic plate. The "Broggi" award also went to the Girotonno champions, a company that has been the custodian of the ancient art of Italian goldsmithery on the table and beyond since 1818.
Moments of emotion shortly before the final award ceremony, when the president of the technical jury, Roberto Giacobbo , with Giuliano Greco at his side, owner of the Tonnara di Carloforte, awarded Italy, represented by the chefs Carlo Biggio from Calasetta, Emiliana Scarpa from Cagliari and Benedetto Di Lorenzo of Palermo, the special “Luigi Biggio” prize , dedicated to the memory of the rais of the Carloforte tuna factory who passed away prematurely a short time ago .
