It's called King Charles and it's a "tasty and elegant" pizza dedicated to King Charles III of England for his coronation on 6 May in Westminster Abbey.

It was created in Sardinia, with typical ingredients and also with a scenographic effect: it is in fact dominated by a precious crown of golden bread, decorated with fine embroidery and inlaid with pearls, to make it regal and majestic.

The idea comes from Emiliana Scarpa, pizza-chef originally from Iglesias, and Graziella Frau, from Siniscola, master of the art of artistic bread, both award-winning in their respective fields.

THE INGREDIENTS – King Charles pizza «is green and has the scents of Sardinia to underline King Charles' commitment and environmental spirit», explains Scarpa. Adding: «Inside it I created a garden with the essences of the island: sage, basil, rosemary, but also pompia, artichoke and wild thistle from Mr. Fabiano di Iglesias. The semolina dough is made with basil chlorophyll extract and pine nuts».

Even the cheese is rigorously made in Sardinia: in fact, the pecorino and lactose-free sheep's mozzarella used for the filling of the ledge come from Nuragugume.

And again, there is the datterino tomato flavored with oregano and, as a final touch, at the suggestion of the sommelier Fabrizio Abis, acorn brandy made in Nuchis-Tempio is sprayed on the pizza.

THE CORONA – The crown of bread, on the other hand, was born in the laboratory of Graziella Frau, in Siniscola, and was perfected with "stages" in Cagliari and Oristano, in the laboratory of the master pizza maker Giovanni Cauli, and then in Sanluri. Made with stone-ground durum wheat semolina, the crown of bread is gilded and decorated with roses, calla lilies, birds, grapes and ears of corn. «Each shape has a profound meaning - reveals its creator - With this crowned pizza we wish King Charles love, peace, joy and much health».

In Cagliari, the King Charles was served at the Sea Flower, the barge restaurant where Emy Scarpa works.

After the Queen Elizabeth, a refined tribute to the late Queen Elizabeth, with whom she triumphed at the 1st Rodolfo Sorbillo Memorial Trophy, the multi-award-winning pizza chef is once again looking to the United Kingdom «for an auspicious tribute to the king».
