The Park of Porto Conte and the Accademia del Lievito Madre have entered into a collaboration agreement aimed at the study, enhancement, promotion and strengthening of the durum wheat cereal supply chain of the Park and of the Nurra di Alghero and for the use of flour useful for the production of typical Alghero breads (the Pà Punyat in particular) with the rigorous use of sourdough (Llevat in Alghero). A pact signed by the president of the Park Raimondo Tilloca and by Antonio Farris, president of the Academy.

The sourdough, in addition to ensuring excellent fermentation, gives the bread nutritional and health properties that are not found in other products obtained with brewer's yeast. The Porto Conte Park and the sourdough academy intend to collaborate to spread not only the practice of bread-making with the use of sourdough, but also the study and enhancement of the processed products, not neglecting the historical-cultural, economic of the territories connected to them.

In this regard, the collaboration aims to develop, also in synergy with other bodies, the Municipality, Porto Conte Ricerche, bakers and other players in the supply chain, the promotion of activities that contribute to informing, educating, training and promoting the consumption of bread obtained with the   sourdough, promoting awareness also through the organization of meetings, courses and evaluation commissions. «Through these activities we want to achieve two other objectives of considerable interest: the use of Carta dei Bread typical of Alghero in all the city's restaurants and to have Alghero recognized, on a par with wine and oil, as the City of Bread», declared the president of the Accademia del Lievito Madre Antonio Farris.

«An agreement of great importance that gives substance to the project already started by the Park institution, of valorisation, promotion of the practice of bread-making with the use, precisely, of sourdough, - comments the president Tilloca - after all, for us the central support for the productive activities of the protected territory even more in comparison with the typical and traditional ones which represent a unicum of extreme value, also in terms of tourism-environmental promotion and therefore of the creation of indispensable economic repercussions".
