A blend of cuisine, science, environment, cinema, tastings, music, and entertainment. And today is the grand finale. The Cabras Bottarga Festival is nearing its final day. Slow Food's Taste Workshops return today, offering new opportunities to learn about bottarga and experiment with pairings with local produce from the Oristano area. The Gal Sinis producers' market and food area activities will also continue, maintaining a close relationship with local supply chains throughout the day. Contemporary cuisine will be a key narrative thread on Sunday. At 12:30, "Trajectories – New Sardinian Cuisine" will feature a live cooking session with Luca Marini, chef of Nakoa in Cagliari, along with Sandra Ciciriello. At 1:35, Bruna Melis and Cristian Carboni of Arkè restaurant will be the protagonists, while in the afternoon the journey will continue with Salvatore Cadeddu, Simone Pinna, and Federica Ghiani of Osteria de' Mercati in Sassari. Different experiences united by the desire to question the meaning of "Sardinian cuisine" today: not a fixed definition, but a heritage that can be studied, reinterpreted, and taken in new directions. At 4 pm, with "Fruit, Bottarga, and Aperitif," chef Luca Marciano will explore the contrast between the sweetness of fruit and the savory component of bottarga, creating a gastronomic encounter rooted precisely in the relationship between seemingly distant flavors. Also at 4 pm, "Beer and Bottarga" will explore the combination of three beers and one of the lagoon's iconic products, alongside Fabio Scintu and Manolo Orgiana. From tastings to masterclasses, the journey continues at 5 pm with Luca Gardini, who will guide the audience through the discovery of Vernaccia, one of the wines that most profoundly reflects the identity of the Oristano area. At 6 pm, Michele Cherchi will lead a meeting dedicated to bread, cheese, and young Vernaccia, three elements closely linked to the island's food culture, brought together in a tasting experience.
At 7:00 PM, the program will conclude with a discussion that once again pushes gastronomy beyond its traditional boundaries. Davide Scabin, Alessandro Aresu, and Bernard Bédarida will explore the relationship between Italian cuisine and Artificial Intelligence, questioning the changes new technologies can bring to creativity, design, production, and the very concept of the gastronomic experience. After discussing environment, climate, space, and innovation, Artificial Intelligence thus becomes another arena in which to test the relationship between tradition and the future.
At 8:10 PM, "Two Seas, Two Dishes, Four Hands" will bring two chefs from different regions and traditions to the stage. Pasquale Torrente, of the Al Convento restaurant in Cetara, and Salvatore Camedda, of the Ulià restaurant in Arzachena, will create a gastronomic dialogue between two seas and two sensibilities. On one side, the traditions of the Amalfi Coast and Cetara's deep connection with fish and its transformations; on the other, Sardinia and Camedda's research into the island's raw ingredients. Rather than a juxtaposition, it will be a meeting of two approaches to interpreting the Mediterranean through cuisine. At 9:25 PM, one of the most anticipated events of the fifth edition will take place. Moreno Cedroni, two-Michelin-starred chef at Madonnina del Pescatore, will be called upon to explore mullet bottarga, applying his experience and vision of seafood cuisine to the iconic product of Cabras. Alongside him is Luca Gardini, in a conversation led by Lara De Luna and featuring the special appearance of Arrogalla. This is one of the encounters that best encapsulates the Festival's journey: a product deeply rooted in a specific territory engages with experiences, techniques, and sensibilities from other contexts, simultaneously maintaining its own identity and opening itself to new interpretations. Starting at 10:30 PM, Arrogalla will bring his sonic exploration to the stage, building on the intersection of tradition and contemporary languages. The fifth edition will close out with Bandakadabra, which from 11 PM will be marching through the historic center with the energy of its Techno Brass Band, transforming the final part of the evening into a traveling party. Throughout the day, activities dedicated to families and children will continue, along with performances by Shedan – Parallel Universe and Rodamundos – Duo Va Pa I. The final Sunday will thus bring together many of the trajectories explored throughout the entire Festival: bottarga and its environment, signature cuisine and local produce, research and innovation, wine, music, and entertainment.
Three days during which Cabras chose to showcase its most iconic product not just for what it is, but through everything that surrounds it: the water from which it springs, the people who produce it, the knowledge that preserves it, and the new relationships it can foster. It is in this intertwining that the essence of "Relazioni di gusto" takes shape: starting with bottarga, it tells the story of a region and, through that region, opens a window onto the present and the future.
