Hygienic and sanitary deficiencies, lack of blast chiller and problems related to the registration of the sheets required by the Haccp manual. These are the irregularities found by the Carabinieri of the NAS in two restaurants in Cagliari and in one in Iglesias. Equipment and areas seized and fines imposed.
In recent days, the Carabinieri specialists have carried out a series of checks on the premises. In Cagliari, the inspections involved two different restaurants. In the first case, "the premises were found to be in extremely poor hygienic-sanitary conditions - the Carabinieri specify -: accumulations of dirt, unsanitized equipment and the presence of objects not pertinent to the food preparation activity".
In the second restaurant, Tre Archi, similar problems were found and since some prescriptions had already been ordered in the past, part of the restaurant and the equipment were seized. "The failure to communicate the acquisition of the food establishment to the competent authorities was detected - the NAS underline - while the premises showed a serious hygienic situation due to the presence of residual building material and the failure to fill out the Haccp operational sheets".
In Iglesias, a restaurant specializing in sushi preparation has come under the spotlight. The Carabinieri have ascertained "the absence of registration in the HACCP sheets of the operations of slaughtering fish products intended for raw consumption - the Arma highlights -. This violation has led to the administrative seizure of the entire kitchen area and the equipment used for this specific activity".
