The Carabinieri of the NAS of Cagliari reported a restaurateur in the historic center of the city to the administrative and health authorities.

According to what emerged following the checks in his room, it was discovered that inside a cabinet fridge freezer he kept 4 kg of slices of oceanic amberjack , purchased fresh and frozen with prohibited procedures and not foreseen in the self-inspection manual.

The food was confiscated.

In the catering sector, the Nas recall, «only raw materials, semi-finished products and ready meals can be frozen provided they are packaged in sufficiently resistant wrappings, suitable for contact with food. In the case of semi-finished products and ready meals, the process must take place immediately after preparation. Freezing must take place using a thermal blast chiller with procedures described in the HACCP self-control plan».
