Seeing it on the laboratory benches is a nice sight. A niche product that was born in Cabras and is increasingly appreciated and therefore sold overseas.
For the mullet roe, the one that is fished in the waters of Mar'e Pontis and then produced in the laboratories of the Consortium that manages the Cabrarese lagoon, it is a record year: in 2022 about 30 quintals were produced. The other years, on the other hand, much less, about 18. In short, half. For fishermen who work in the body of water an excellent result. The thirty quintals of roe caught and produced in the pond between September and October are already on sale everywhere.
In the fish market managed by the fishermen, on the shores of the lagoon, in the many supermarkets in the province but also overseas. The price? 250 euros per kilo.
"This time online sales are also going very well - says the president of the Mar'e Pontis Consortium Carlo Sanna who manages the pond - Our bottarga is really traveling all over the world".
In short, lucky roe, thanks to the salinity, the temperatures and the type of mullet that entered the pond last year: according to the experts. Without forgetting the hard work inside the laboratories of the Consortium where the cutting of the fish, the extraction of the eggs, the salting, the drying and finally the packaging of the yellow gold takes place.
