From Wednesday the journey into the kitchens of the Bel Paese starts again to discover the local culinary traditions
"For the first time we should be able to arrive in Sardinia as well. I would like to be told in Gallura how the bean peel soup is prepared".
This was stated by Chiara Maci, foodblogger, companion of chef Filippo La Mantia and presenter of the TV program "L'Italia a morsi" (Food Network), a journey into the kitchens of the Bel Paese to discover recipes, typical products and local realities, whose new season will start on Wednesday.
The formula of the transmission has remained the same: it is still the keepers of traditions who reveal the stories and secrets of their dishes, that is, grandmothers of Italy who preserve ancient recipes, passionate mothers and cooking experts, organizers of historical and traditional festivals, members of brotherhoods.
Each welcomes the foodblogger into his home and together they create a typical menu of the area.
"Eleven years ago when I started this profession - he said - I thought that good food was a matter of technique and talent. Instead, the more I go on, the more I realize how closely it is intertwined with people's memories and stories. Even with so many cameras, in front of me. in the kitchen, among their ingredients, they open with me like never before and each recipe brings out an anecdote, a family secret, childhood images. remembers the mornings at my mom's house. Or my favorite dish, spaghetti with tomato sauce: I ate them as a child when I returned from traveling with my parents and grandparents and it's still the first thing I want today when I get home after a period around for work. That dish will always be 'home' for me, "explained Maci.
For Maci, during the pandemic, the desire of Italians to cook has grown: "I have friends who had never put their hand to the stove and who started preparing everything during the lockdown. Now, and I'm also happy, the desire to go out prevails. , to go to a restaurant. There is even less time to give oneself to recipes. I think we will return to the 'old' equilibrium, but in the meantime certain things remain ", he concluded.
