With a recent decree of the Ministry of Agriculture and Food Sovereignty, one of the sweets that has made the history of the sector in Sinnai, “Su “pistoccu”, has been included in the prestigious national list of Traditional Agri-food Products. A sweet deeply rooted in the culture and tradition of Sinnai that the Laore agency has brought to the attention of the Ministry itself.

It was a confectioner from Sinnai, Mercede Zunnui, 78 years old, who received some officials from Laore. Highly expert technicians who had stopped to follow all the stages of preparation of "su pistocccu", enjoyed with coffee. They were so impressed that they then proposed this dessert to the Ministry of Agriculture.

"My teacher - says Mercede Zunnui - was my mother Assunta Farris who prepared su pistoccu for some neighborhood party, for some baptism, for a family wedding. She also had some customers who came from Cagliari by bus: su pistoccu must have its own characteristics made with eggs, sugar and Buitoni wheat starch. The egg yolk must be white. The final product must be soft and equally white. As soon as it is taken out of the oven, the individual "pieces" must be cut with a hot knife to avoid the formation of lumps. Then, they come closer again, finally spreading the "cappa" just boiled and made of coffee and sugar".
