With the crisis of large industry, the municipal administration of San Gavino Monreale focuses on the enhancement of excellent products such as saffron but also rice, legumes and honey. The councilor for agriculture Nicola Ennas points this out: «The purple flower it represents the history, tradition and a piece of the country's economy.

The cultivation of Pdo saffron is an important income integration opportunity for agricultural businesses and hobbyists and following the path of valorisation is the best way to carry on a centuries-old tradition that today is a candidate to become an experiential tourist attraction, as well as an important voice economy for the whole territory.
With its thirty cultivated hectares and two hundred kilograms of product, San Gavino is the Italian capital of saffron: «As an administration we want to continue to promote the network of Municipalities, to encourage and support producers in promoting the spice outside the municipal borders, through participation in regional and national fairs, exhibitions and festivals».
