A 117 million euro business . This is the one that revolves around artisanal ice cream in Sardinia , where there are 225 ice cream parlors of which 149 are artisan workshops .
From the "freshest" ranking of the year, taken from the dossier "Ice cream parlors: artisan businesses and household expenses for ice cream", created by the Study Office of Confartigianato Imprese Sardegna , on ISTAT 2022 source, it is also discovered how in the Isola employs around 400 people (nearly 900 in total), with an average of 1 company for every 7,000 inhabitants and a turnover of over 117 million euros. In practice, each household spends 160 euros each year on cones, bowls, granitas, ice lollies and sorbets.

«One does not give up on the small pleasures of life, not even in times of crisis – says the President of Confartigianato Imprese Sardegna, Maria Amelia Lai -. Our invitation for this summer is therefore to consume the healthy and good Sardinian artisan ice creams also because the prices are substantially unchanged compared to last year, even if the increase in raw materials has been significant».

«No one intends to impose exponential increases on their customers - adds the President - especially at a time when we are already so worried about inflation, we need everything except the increase in the cost of such a loved and so popular product ».

By better analyzing the national and regional data, Sardinia ranks 15th as a percentage of artisan companies (66.1%) against 81.9% in Alto Adige, which occupies the first place, and a national average equal to 75.5%. As for the turnover, the data show that expenditure in Lombardy exceeds 328 million euros, while in Italy the quota of 1 billion and 788 million is exceeded.
THE TASTES – For 2023, decidedly classic flavors are the winners in ice cream shops, compared to the 600 available: “strawberry”, “chocolate” excels followed by “hazelnut”, “lemon”, “cream”, “pistachio” and “stracciatella” ” even if the evergreens “tropicana”, “limoncello”, “green tea”, “rainbow” or even “loacker” don't miss out either. For those with diet problems (one in ten), here is soy ice cream. In Sardinia, on the other hand, Sardinian flavors such as "sebadas", "mirto" and "pardula" or even cheese flavors are also growing.

TRENDS 2023 – Among the trendy flavors for the summer, the Aperol Spritz ice cream stands out, the salmon flavored ice cream with lime zest and chives and other gastronomic flavors such as the cacio e pepe flavored ice cream, or the unusual Calabrian nduja ice cream, to be served on a mini-bruschetta. Among the summer trends, a reference to the film of the moment cannot be missing, the one starring the most famous doll in the world. In fact, the surprise is the Barbie flavour, all pink with rose chocolate variegation, meringues and marshmallows.

COSTS – The average price of the two-flavor cone is around 3.50 euros . Some of the most famous ice cream parlors have increased the two-flavor cone to 4 euros, but the points of sale in the neighborhoods are kept under 3 euros. The range ranges from 20 to 28 euros per kilo. Often it is the general costs of the business that make the difference, for example the costs of renting the premises and obviously the location: if in the center the price can even double and, consequently, the receipt also rises.
