Cagliari, Sicily wins at the national pastry championship of hotel institutes

Sicily is the winner of the national pastry championship of the hotel institutes of Italy, organized in Cagliari by the International Federation of Pastry, Ice Cream and Chocolate (Fipgc) in collaboration with the Ministry of Education and Merit (Mim).
The event, now in its seventh edition, was hosted at the Azuni Institute in Cagliari, winner of the last edition of the championship.
The event was attended by 26 hotel institutes and 52 students from every region of Italy.
The first prize was awarded to the Ipsseoa "Karol Wojtyla" of Catania, represented by Aurora Gambuzza and Awa Thiaw Dieng, with the dessert "Ecstasy".
"The dessert - we read in a note - stood out for a refined balance between creaminess and crunchiness, citrus aromas and spices with a sphere of myrtle liqueur made with the spherification technique. Among the layers, a coffee cream, panna cotta with mandarin and lime gelée, caramel ganache, Sichuan pepper brittle and hazelnut frangipane, all enclosed in a chocolate and cinnamon shortcrust pastry".
In second place, the Iiss "Cillario Ferrero" - Arte Bianca of Neive, Cuneo, with Sara Appendino and Vittoria Tibaldi, authors of the dessert "Asphodelus". Third place went to the IiS "G. Renda" of Polistena, Reggio Calabria, represented by Vincenzo Parrello and Giovanni Garruzzo who created "Nuracàlia, «a dessert that blends flavors and cultures in homage to the dialogue between Sardinia and Calabria».
"Hotel schools - comments the president of Fipgc Matteo Cutolo - represent a fundamental pillar for the future of our sector. It is precisely from the comparison of these schools that the talents of tomorrow are born, young enthusiasts who with study, dedication and creativity are already contributing to the renewal of Italian pastry making. We as a Federation invest a lot in training, and this means guaranteeing ever more quality, innovation and continuity to an evolving tradition".
