This is what the president of Confartigianato Imprese Sardegna , Maria Amelia Lai, says.
The Sardinian bakers - the association denounces - continue to bake bread but, due to the very low purchasing power of the citizens, the galloping inflation, the increases in raw materials and energy prices, they struggle to make ends meet or work in loss. With a clear decline in the sales of rosette, michette, civraxiu and moddizzo as a consequence of the fact that people buy the bare minimum and begin to limit waste by choosing more and more one-kilogram pieces of bread, instead of the usual half-kilo loaf, to consume not only on the same day, but also on subsequent ones.
According to the analysis of the Confartigianato Imprese Sardegna research office, based on Istat data, the category represents less than 900 companies that produce fresh bakery products . Among these companies, 78%, equal to approximately 700 units, are artisans.
Over 3 thousand workers are employed in the artisan bakeries themselves .
Again according to the Confartigianato dossier, at a regional level more than a third of artisan bakers and pasta makers are difficult to find . Of the total revenue expected by businesses in 2022 for the professions of artisan bakers and pasta makers, 38.4% is "difficult to find". And the share of figures in the sector considered difficult to find grows by 10.3 percentage points in 2022 compared to the value of 2021.

The artisan bakery sector is very important for the local economy , especially because, unlike other food products, fresh bread cannot rely on the export channel for obvious reasons."
