What condiments to put on foods? Pietro Senette, nutritionist and researcher answers :
Often going from a simple and nutritious dish to even a fancier one is a simple matter of seasonings. There are many, in some practical cases, other times unusual or bizarre: the important thing is that they are always healthy! One of the most practical, versatile and traditional ones in Italy is pesto .
Starting from a few ingredients such as basil, rich in vitamin K and manganese, with marked anti-inflammatory properties, you can prepare it at home quickly by adding a few pine nuts or alternatively walnuts in the totally vegetable version or by adding a sprinkling of grated cheese to satisfy even the most demanding palates.
Other healthy and practical variants require a few vegetables , such as broccoli, zucchini or aubergines flavored with garlic or onion, one at a time or even combined expertly and which can accompany first and second courses after being passed to the mixer and dosed directly on the first or second course dish ready to be served.
Finally, for condiment connoisseurs it is not a wrong idea to use the aforementioned in the preparation of some tasty bruschetta to be used as an appetizer.
