Today on Sardinian Recipes we're talking about a seafood main course that highlights the flavor of sea bass: sea bass with prawns.

INGREDIENTS: 1 sea bass, medium-sized shrimp tails, cooking cream, bread slices, parsley, milk, extra virgin olive oil, salt, pepper.

PREPARATION. First, scale and gut the sea bass. Rinse it with water, dry it, and then fillet it. Next, make several incisions in the sea bass fillets. Then, soak two slices of bread in milk: soften them, squeeze them, chop them into very small pieces, and place them in a bowl. Add the cream, diced shrimp tails, chopped parsley, salt, and pepper. Mix the mixture together and use it to stuff the sea bass fillets. Then, tie the fillets with string and place them in a baking dish. Drizzle with extra virgin olive oil and bake at 180°C (350°F). Cooking time is approximately 12 minutes. Once the sea bass is removed from the oven, remove the string and serve. It goes very well with a side of boiled or baked potatoes, and you can add some cherry tomatoes if you like.
