In Sardinia there is a boom in the restaurant business, with a historic increase in activity for the island, so much so that it also holds the national record in 2023 for percentage increase. Nuoro is the Italian province with the highest concentration of bars and discos in Italy (over 320 per 10 thousand inhabitants) while Cagliari is placed on the lowest step of the podium (294.5).

At the end of 2023, there were 7,564 commercial establishments in the sector (including street vendors). Over 200 more than the previous year with an increase of 2.7%, far higher than the 1.8% recorded on a national basis.

But the "fashion" of opening restaurants and pizzerias is considered excessive by some and often not supported by adequate preparation. Result: in a short time the vast majority of businesses close without having obtained the desired results.

«You can start with little bureaucracy and full rooms create a lot of optimism», confirms Emanuele Frongia, number one of Confcommercio Fipe in Sardinia. «But not all that glitters is gold and many forget that the market requires a lot of professionalism».

Furthermore, there is the usual difficulty in finding specialized personnel.
