The arancino with artichokes and bottarga in true Oristano style, prepared by the students of the Hotel Institute of Sassari , is the grand winner of the second edition of Campagna Amica Gourmet , the regional food and wine competition of hotel institutes promoted by Campagna Amica-Coldiretti Oristano in collaboration with the Don Deodato Meloni Hotel Institute of Oristano.
Eight hotel schools from Sardinia participated in the competition and with commitment and skill they prepared excellent dishes, enhancing the great excellence of the territory, the rice offered by the company I Ferrari.
On the second and third steps of the podium chosen by the qualified jury composed of well-known chefs, coordinated by Salvatore Camedda and supported by Alessandro Piras and Antonio Sanna, were the young people of the Hotel Institute of Alghero followed by the outgoing winners, the students of the Institute of Tortolì.
"Cooking with local products, including our Oristano rice combined with other Campagna Amica products, not only allows you to obtain delicious dishes tied to our traditions but also to maintain a correct and healthy diet, starting from the youngest who represent our future also as chefs" underlines Paolo Corrias, president of Coldiretti Oristano. "The initiative also wanted to represent a sort of slogan against processed food to underline how in our country, with the quality of the local product, not only do we create excellent dishes but we also enhance the entire territory - adds Emanuele Spanò, director of Coldiretti Oristano - good cooking and healthy food characterize our region and, in this case, an entire people and a territory".
