Not just a food festival, but a festival celebrating its majesty: bottarga. The fifth edition of the event, titled "Relations of Taste," will take place in Cabras from September 18th to 20th.
It will bring chefs, scientists, journalists, sommeliers, and artists to the squares of the historic center for three days, where bottarga becomes the starting point for discussions on climate, wetlands, geopolitics, space, and artificial intelligence.
Over 40 attendees are expected over the three days, including 11 chefs and more than 15 industry journalists. Friday opens with Radici d'acqua (Water Roots), a discussion between Augusto Navone of the IMC Foundation of Oristano and Gianluigi Bacchetta of the University of Cagliari on the value of lagoon ecosystems, followed by a lecture by senior researcher Mario Tozzi on climate change and the wetlands of the Sinis Peninsula. The evening will continue with a cooking demonstration by Gianfranco Pascucci and a concert by Il Klan.
On Saturday, as the September lights come on in Piazza Eleonora, Rai journalist Eva Giovannini, correspondent Bernard Bedarida, geopolitical expert Alessandro Aresu, and Marcello Spagnulo of Limes will discuss the future of food in the new race beyond the atmosphere in "Food Meets Space."
On Sunday, Chef Davide Scabin will engage with artificial intelligence, exploring what algorithms can learn and what remains tied to human intuition and gesture. On the culinary front, the program is divided into two sections.
"Trajectories" will showcase the new generation of Sardinian chefs reshaping the island's culinary identity. "A cena tra le stelle" (Dinner among the Stars) will bring to Cabras the great names of Italian cuisine and hospitality—Sandra Ciciriello, Davide Scabin, Moreno Cedroni, Gianfranco Pascucci, Pasquale Torrente, Salvatore Camedda, and Hirohiko Shoda—spoken by some of the most renowned and respected figures in Italian food and wine journalism, as well as by Giuseppe Carrus, editor of the Gambero Rosso Vini d'Italia guide, and Luca Gardini, editor of the L'Espresso guides.
The Festival will also offer training and meetings with those who work the land and the lagoon every day. Tomorrow, the City Council will unveil the full program.
