Pecorino Romano focuses on sustainability and respect for the environment throughout the entire production cycle.
The Consortium for the protection of Dop cheese produced in Sardinia, Lazio and some areas of Tuscany has launched the “Life Magis” project, an idea born thanks to the intuition of technician Gianfranco Gaias. A commitment that has allowed one of the excellences of the island's dairy production to be a protagonist at the FAO World Conference in Rome.
The United Nations agency is focusing on the prospects of geographical indications in terms of sustainability. A matter that sees Pecorino Romano ready to renew investments and research to obtain green certification from the European Union for the benefit of the entire supply chain.
The production of raw milk is the most impactful phase of the cheese life cycle, with over 94% of the impacts attributable to this phase. It is precisely through this type of analysis that the value of environmental certification emerges: a distinctive sign that enhances the commitment to the environment by Pecorino Romano producers.
In the medium term, work will be done to make Sardinian companies active in the processing of sheep milk fully sustainable. Actions necessary to guarantee added value and environmental protection.
