«I'm ready to represent Sardinia and Puglia at the next edition of the world pizza championships». This was announced by Paolo Ignazio Paolillo, a pizza maker of Apulian origin who has lived on the island for years, more precisely in San Sperate.

«I continue to study», the 55-year-old said excitedly, «I always try to improve my dough and my technique. The passion was handed down to me from my parents who were bakers. I then began my journey with the military service, working in various regions, both Italian and non-Italian».

Between 19 and 22 February Paolillo will therefore be in Rimini to participate in the world competition "Pizza without frontiers", an occasion that will see dozens of pizza masters try their hand at many different activities: from classic pizza, passing through the Roman, 4 hands, Neapolitan and many others.

Paolillo has already participated in various competitions, often placing himself in the top 10, but now it's time for a new challenge: «I will bring my 72-hour leavened dough and a particular blend of flour. I'm ready for this new challenge, I'm excited, but ready to give my best».
