On the one hand , the cost of flour which increases by 34% , on the other the increase in the price of bread which slows down and the decline in the sales of rosettes, michette, civraxiu and moddizzosu .

Sardinian bakers are no longer able to make ends meet: a heavy damage if we consider that baking is a fundamental sector for the island's food industry. According to the analysis of the Study Office of Confartigianato Imprese Sardegna, based on Istat data, over 100 thousand tons of fresh bread are baked every day for over 800 types of product .

There are 730,510 Sardinian families who on average spend about 21 euros every month on floured products, granulated foods and sandwiches of all kinds. On average, the annual expenditure incurred by all families on the island for the purchase of bread amounts to 186 million euros.
Reworking the result of a UnionCamere survey on inflation on products that are used for making bread and pasta, according to the Study Office of Confartigianato Imprese Sardegna, it emerges that if flour increased by 33.8% between October-November 2021 and October-November of this year, and by 0.8% between August-September 2022 and October-November 2022, the price of bread, therefore of the finished product, grew by less than half and therefore by 16% between October- November 2021 and October-November of this year, and by 0.8% between August-September 2022 and October-November 2022. But to work the loaves, just to give some examples, you also need EVO oil (increased by 29 %), that of olive (+43.6%) of various seeds (+16.6%), butter (+23.5%) and sugar (+19.4%).
«Baking companies - underlines Confartigianato Imprese Sardegna - produce basic necessities whose distribution cannot be jeopardized, under penalty of the risk of serious repercussions on social stability. It's unfair to make the population lack bread."
«For this reason - the Artisan Association points out - we ask for specific interventions to face the increases in flour, packaging, diesel, tools and machinery . There are 800 companies on the island, with over 2,400 employees, which for over two years have been dealing with a situation of very strong instability which has severely tested the stability of production and endangered the quality of food production, the symbol of our island. Without targeted and immediate interventions, artisan bread, a primary good par excellence, could soon disappear from Sardinian and Italian tables ».
The white art entrepreneurs of Confartigianato Imprese Sardegna have also written to the Minister of Made in Italy Enterprises, Adolfo Urso, to solicit the requests of the category, condensed into 4 points: the increase in the tax credit envisaged for high energy intensity, the intervention on the rules relating to the detachment of supplies, on the tax treatment of characteristic night work in artisan bakery companies, and the recognition to companies in the sector of the qualification of operators carrying out strenuous work.
