The name of the place was not chosen at random. Both grandmothers of Giacomo Cossu , owner of the homonymous trattoria, in the heart of Arborea , were called " Margherita ". There is also his place on the list of 29 new Bib Gourmands . The restaurant has been included in the prestigious Michelin Guide with the smiling face symbol of the Michelin man who licks his mustache for a pleasant gastronomic experience.

For the two chefs, the brothers Fabio and Alessandro Marongiu , who spend hours and hours in the kitchen with the hope of conquering the palates, this is an important recognition , welcome but above all unexpected. “I discovered that I received this recognition through an email received from the management of the Michelin Guide”, says Giacomo Cossu, 47 years old. "A few words where it was written that my restaurant, after an anonymous visit by the 'inspectors' had been chosen to be included in the new list", continues the restaurateur. Initially he did not believe so much in the message because “in reality I made several checks, it seemed too good to me. It was all true ”.

The man tries to imagine what could have conquered the palates of the experts who went in search of a simple and easily recognizable cuisine: "Perhaps the use of raw materials , all of quality , both from the territory but also from other areas of Italy such as mortadella or tortellini from Bologna or pesto from Genoa. Everything is chosen with care by us, also on the basis of seasonality . My two grandmothers, excellent cooks, one from Pabillonis and the other from Bosa , taught me to cook simple ingredients, often poor but which if cooked well have their own why. An example? Fried bread ".
