An edible liquid sphere: international patent for the University of Sassari

There are currently no "Made in Italy" spherification systems on the market capable of containing hydrophobic liquid matrices, such as extra virgin olive oil, and hydroalcoholic liquid matrices, such as alcoholic beverages. The system was developed by researchers from the Department of Agriculture of the University of Sassari.
The Sassari university, within the IDOLI project (Innovation in Dairy and Olive Industry - Research and development program of the Sardinia Region), has obtained the national and international patent for industrial invention, through the study and implementation of an innovative method of an edible sphere containing a liquid matrix.
The work was carried out by the team formed by Dr. Maria Grazia Farbo PhD, Dr. Elisabetta Avitabile PhD and Dr. Roberto Cabizza PhD RTD/A, under the guidance of Prof. Costantino Fadda of the Food Technologies section of the Department of Agriculture.
Two years after obtaining the patent for an industrial invention in Italy, the patent application was extended internationally.
The invention aims to give two responses to the market, the first of a technical nature, linked to the production process, the second of a food nature, containing liquid matrices without altering their characteristics. It may also be usable by the chemical and pharmaceutical sectors.
