A production, packaging and marketing plant for carasau and guttiau bread in Gallura was seized by the Carabinieri of the Nas of Sassari, and the owner was reported at large for commercial fraud.

After a series of checks, the police identified the factory which was indicated on the labels of the seized bread in a different location than the real one, in fact located in the province of Nuoro.

In particular, during the blitz, the military ascertained that the production site was located in the basement of a disused industrial warehouse, in a large room - devoid of any hygienic-sanitary and structural requirements - in which the processing of the pane guttiau, the packaging and storage of the finished product and of pane carasau of unknown origin, as well as the storage of a large quantity of products of animal origin (cheeses and cured meats), many of which lack labelling, accompanying commercial documentation and of anonymous pasta.

Inside the illegal activity, completely unknown to the Health Authority, numerous drums of automotive lubricating oil (with a capacity of 250 litres) had been placed in extreme disorder (with cardboard packaging upside down on top of each other). contact with the "production lines" of guttiau bread, as well as dust, barely sufficient lighting (during the verification activities it was necessary to use torches), dozens of empty plastic containers (of olive pomace oil and seed oil for frying), chemical products such as open silicone cartridges, lubricants and others, positioned on the processing area, in promiscuity with the bread and the labels used for its packaging.

Furthermore, the electrical system consisted of flying cables and extension cords; there were no sinks or toilets. Inside the plant in question, refrigerators and chest freezers were also installed, with widespread dirt and with foods of animal origin inside (cheeses and various cured meats) affected by the presence of insects, both alive and dead, and larvae.

After the intervention of the technical staff of the Food Hygiene and Nutrition Service of the Local Health Authority responsible for the territory, the production plant was administratively seized as it was clandestine, devoid of any structural and hygienic health requirements, conducted in the absence of HACCP , with the presence of processed and stored foods, mostly untraceable.

The owner of the business was charged with administrative fines of 7,500 euros and was reported to be free for having marketed, in favor of numerous and different companies operating in the regional territory, "guttiau" bread in various types of packaging with indications: « Seasoned with extra virgin olive oil", foods that were actually produced and/or packaged in a factory other than the one shown on the label, completely illegal and unknown to the competent health authority, with the use of olive pomace and seed oil and not extra virgin olive oil.
