Rediscovering the flavors of the past. With "Su pistoccu de caffei", two other sweets from the past of Sinnai have also ended up in the national list of "Pat” (Traditional Agri-food Products): "Is Tziddinis" presented by Debora Pusceddu and "Is costeddeddas" by Adelina Pireddu.

Sweets of extraordinary, ancient goodness that the Ministry of Agriculture has included in the “Pat”, giving them back the prestige of the past when the economy of Sinnai was mainly made up of agriculture, sweets and sheep farming. Thanks to individual sweets makers, thanks to associations and committees and to Laore who have also brought these three sweets rich in taste, charm and history to the Ministry. "Is Tziddinis" and "Is costeddeddas", were also the focus of a conference during the festival of Sant'Isidoro.

Su Pistoccu de caffei packaged by Mercede Zunnui in her home laboratories has its own history, like Is costeddeddas and "Is Tziddinis". «In costeddeddas – says Eleonora Pireddu, from Sinna, Agris employee – the main ingredients are sapa, honey, cocoa, sourdough, ground almonds. Among the ingredients of "Is Tziddinis", honey, almonds, toasted durum wheat semolina, cinnamon and toasted orange peel».

With these three major awards, Sinnai can certainly contribute to the relaunch of the entire confectionery sector which, with the baskets, can be said to have always been identified with the town.

Recently the Pro Loco has set up the sweet exhibition, together with other cultural initiatives. The experts of Laore have done their part by bringing Su pistoccu to the attention of the Ministry of Agriculture.

"The Municipality - says Mayor Barbara Pusceddu - wants to have a role in this relaunch. Sweets such as baskets will also be able to have new visibility, the "Lollas Project".

The Pro Loco, Laore and the Sant'Isidoro Committee are doing important things by relaunching our sweets at the highest level: inclusion in the Pat can only bring prestige.

The awards arrived last February with the Municipality certainly having played its part, together with the Pro Loco and the Committees and the confectioners capable of safeguarding and proposing the art and flavours of their grandmothers.
